Weekend Highs and Lows

This weekend seemed forever long, in both good and bad ways. David left town Thursday morning (Happy Valentine’s Day- Boo) for work. To all you women who have husbands that travel a lot- high five to you. I missed him so much!

Ok, cheese fest over.

There were some highs and lows this weekend. First in the literal way- High of 62 on Friday. Hailey made dirt soup with my kitchen utensils.

Low of 23 on Saturday. And snow. Weather is weird.

Then, of course, there is the figurative highs and lows. Such as mom’s playgroup turned girls night out- HIGH!

We went to eeZ Sushi in Birkdale. The food was delicious, the wine hit the spot and best of all we got to have a real conversation without stopping every 5 minutes to change diapers or steal back sippy cups. These girls are great! The lighting in the restaurant? Not so much.

I needed that girls night after the afternoon LOW. Something smelled bad in the laundry room. I tracked it out the garage, where I discovered our fridge/freezer had died…. most likely a couple of days ago. Everything in it was hot and drippy. The15 pounds of local grass fed beef? Rancid. And it had dripped everywhere. Same with the frozen quail and venison…and breast milk apparently?

I’ve never wanted to be a vegan as badly as when I was cleaning out and scrubbing down the fridge, batting away the flies. GAG.

Cooking for one this weekend left me uninspired (or maybe just lazy?), so I was high on cloud nine when a package from Saffron Road appeared at my door.

Indian food wrapped up in easy-to-heat-and-eat packages? Yes, please! They use all real, recognizable ingredients and the flavors are truly authentic. Delicious.

The easy-meal-train didn’t stop there. Saturday’s lunch was compliments of Whole Foods where I met Alexa to discuss the ins and outs of health coaching. Makes me miss it!

Unfortunately Sunday brought another low in the form of congestion, sore throat and a headache, otherwise known as a cold.

So what do you do when life hands you a killer cold? Make soup!

Along with ACV and garlic, my sniffly body was begging for hot and sour. After debating how many bowls I needed to buy to satisfy the craving, I decided to try making it myself. I looked over several recipes and decided to combine them in my own concoction.

I was amazed at how “real” it tasted; not the best I’ve ever had, but much better than many I’ve tried from restaurants. Plus it’s the best kind of crockpot recipe- dump it all in and hit “on”. Check out the recipe for Crockpot Hot and Sour soup next time you get a cold.

I also made 2 weeks worth of freezable breakfast burritos and my favorite kale chips. Hailey stayed busy making more dirt soup.

Ugh so sorry about your fridge!! That would be frustrating…glad you had so many HIGHs to make up for it (or at least make it better) though! :)

Jeez! I’m so sorry to hear that your fridge/freezer died. That’s a big terrible thing.

My husband doesn’t travel a ton, but he does occasionally for work, and I hate it. Like you said, props to those women whose husbands travel a lot. That would be tough for me. Ugh, and sorry about the freezer! Cleaning it out sounds like no fun. :( Hope you feel better ASAP!

I think I would cry if our deep freezer died. We don’t have a ton of meat but man, I love that thing. So sorry! You definitely earned more than a back rub!

I’ve been making freezer burritos since I saw your first post, and I did three weeks worth last night. Phew. A trick I learned is to “flash freeze” the burritos on a parchment-lined cookie sheet for two hours. After that, you can take the burritos and toss ‘em in a freezer bag. They won’t stick or get burn. It saves time wrapping and some foil, too!

Oh my gosh I LOVE that idea! I will definitely use it next time. I save all the tinfoil so I can reuse it, but it is a lot of wrapping. Thanks :)

Oh gosh….I so feel for you with that fridge situation. That must have been so gross and I agree…I would have wanted to be a vegan after that as well. haha :)

It seems like those kinds of things always happen to me when Mike is out of town too (which is rare).

I have never heard of Saffron Roads products before, but they sound delicious! I am pretty much obsessed with Indian food, so the idea of having a convenient Indian option sounds great! Is the Chana Saag variety vegetarian? I am assuming that it is, but I thought I would ask!

So sorry about the fridge, I bet that was horrible to clean. Whenever we have steak and the husband is prepping it, I always think to myself, I can def be a vegetarian. Glad you were able to have a girls night, we always need them. Have a good week!

Oh you poor thing! I can’t imagine how much I would have cried (yes, literally) over spoiled meat and having to clean it up.

I sublet an apartment my last year of college and the girl who was currently living there (I love her, but yeah…) had left the frig in a mess. I’m talking mold, cat hair (gag) and old meats. I use an entire roll of paper towels and a bottle of the good stuff (bleach cleaner). I’ve been there and I sympathize!

I’m so sorry about your fridge! That had to have been horrible to clean up as well as lose all of that food. I can’t believe that crazy temperature change… I always seem to get sinus headaches when the weather does that.

None of my lows can compete with your fridge low. You poor, girl! I’m glad that it is all cleaned up, but I’m sure the experience was less than pleasant.

YUCK – sorry you had to clean that. Ugh!

I really want to make some freezable breakfast burritos – they are something I am often drawn to on brunch menus and I make less fancy ones (eggs, leftover veggies OR chopped veggie burger, cheese, salsa) for dinner on nights my hubby works late.

Hot and Sour Soup is my go-to lately. I don’t make it in my crock-pot, or really use any ingredients I’m probably “supposed” to, but I discovered that adding chili paste and vinegar can turn pretty much anything into that delicious, healing (at least in my mind) concoction of sweet sour heat! My latest is a combination of curry powder and the above, with a random bag of Trader Joe’s frozen veggies, a smidge of tomato sauce, ginger, and garlic. DELICIOUS.
