CSA Meals & My Sun Bathing Belly

Can you believe it’s near the end of May? I’m a little shocked that Memorial Day weekend is coming up this weekend.  I know summer is officially here, though, because the heat (90+ degrees) and humidity arrived this weekend.  Luckily, so did my new bathing suit, so I was able to get out and enjoy it!

My first ‘mom’ bathing… I’m officially old. ;)

Along with some lake action, I relaxed by hitting up the Davidson Farmers Market to check out the goods and pick up this week’s CSA share.

That’s a quick shot of my beloved farmers market! I just love the hustle & bustle, the strollers, the pups, the samples, the freshness of all the foods and the happy buzz that arises from all the conversations.  Officially one of my happy places.

I loaded up my canvas bag and carried this week’s treasures home.

On this side: a head of cabbage bigger than my head, some fresh beans (that I was told were of the green bean variety) and 3 glorious tomatoes.

On the other side, new potatoes, cucumbers and more leeks!

More soup? Perhaps, but I wasn’t sure yet.  I was, sure, however, that I was hungry and wasted no time beginning to gobble up my fresh produce.

I snagged the ripest tomato, chopped up that bad boy, and topped it with a drizzle of balsamic vinegar, 3/4 oz crumbled feta cheese, oregano, pepper, salt and some fresh baby basil from my plants that are starting to flourish.

For those that like nutrition stats: 78 calories, 8 carbs, 3.5 fat, 2 g protein.

That was enough to wet my whistle (told you, I’m officially old- look at my sayings ;) ) and I knew I needed more freshness, so I stabbed 3 of my new potatoes and nuked them for about 4 minutes, until soft.

Then I topped the diced ‘baked’ potatoes with 1/2 c of plain 0% Chobani Greek yogurt, salt and pepper.

IMG_8712 IMG_8713 I’ve always been a bit hesitant to substitute plain yogurt for sour cream, but this plain Greek yogurt hit the spot and tasted like a dream.  Creamy and satisfying!!

179 calories, 29 carbs, .5 fat, 14.5 g protein.

Satisfying, fresh, organically delicious!

Isn’t the warm weather the best? Your farmer’s market looks great–I went to one around here and it was a big disappointment. I’m going to keep trying though.

I’ve seen leeks on a pizza (more like a savory tart) before, if you’re sick of soup :) I’ve also seen them used with braised meats in place of onions.

Thats so funny, I bought a big hunk of feta to make a very similar salad. For some reason I was craving the freshness of tomatoes too!! :)

You look adorable in your bathing suit.. and I mean that in a young hip mommy to be kinda way :)

It was so warm yesterday — but it rained the rest of the weekend. We also had a tornado in parts of Minneapolis last night so it must be summer around here!

Thank you for supporting the Davidson Farmers Market! I volunteer at the market every other saturday. It’s such a fun environment. That salad looks amazing!

No, summer hasn’t really hit here yet. Still definitely spring like with low 70′s weather but that’s alright, it will come eventually. : )

I find that some Greek yogurts more easily act as sour cream subsitutes than others…because some are more sour than others? ;)

I love subbing greek yogurt for sour cream! Also, I am way jealous of your legs. My preggo legs look NOTHING like yours. HOT MAMA!

Summer hasn’t hit me yet because the weather here has been mostly cold! We had one nice day this weekend and it finally felt like summer, but not sure when it will be back for real!! You look fantastic girly…love the mom suit. :)

I haven’t tried greek yogurt on a baked potato yet, because I don’t really like sour cream, but I think I’d like greek yogurt… no idea why :)

The tomato and feta dish looks amazing! I love that combo. I just recently tried greek yogurt on a baked potato and I was really surprised at how good it was! I didn’t miss the sour cream one bit.

Our summer could hide for a bit longer and I’d be OK with that. I love the sunshine, but the humidity can hide all summer as far as I’m concerned :)

I went to the farmer’s market this Saturday and had such a bad experience. I got suaded into buying a homemade crab and spinach casserole for *$35.00*. After I tasted I figured, okay I’ll try it. Then she told me the price. Ouch. Oh and the peaches I purchased for $6.00 were overly ripe and mushy I had to throw most of them away. What a waste and disappointment! So much for my trying to support local vegetation/farmers.
And summer has definitely arrived. It was a scorcher here in Louisiana.

You look so cute in your bathing suit! So glad summer is finally showing its face for someone. It’s still kinda miserable here in the NE, but the temps are increasing so that’s good.

Summer definitely hit me this weekend, with a big ole’ sunburn! At least I enjoyed time outdoors. It looks like you got some great stuff. I’m looking forward to my next farmer’s market trip.
