Continuing along with my spring fever feelings I’ve been having lately, I’m totally loving fresh fruit right now. I may or may not have devoured almost an entire cantaloupe yesterday…
The cantaloupe I’ve been getting has been so sweet, and when dipped in red wine vinegar, it’s perfect! It may sound like an odd combo, but my mom used to serve us cantaloupe and cabbage (as sides to a meal) and the red wine vinegar would trickle over to my cantaloupe and I’ve loved the flavor explosion of the two together ever since!
What else am I loving? These new biscuits!
First things, first, I wouldn’t call these health food, but if you’re craving biscuits (like I was) and don’t have the time to whip up some homemade biscuits (which I didn’t), these new Pillsbury Simply Biscuits are a great option. They are the only ready-to-go biscuits (that I could find) with NO transfat, NO high fructose corn syrup,and NO artificial colors or flavors.
Plus, when combined with my favorite eggs…
and a little shredded cheddar and nitrate/nitrite free bacon, it makes one killer breakfast!
Droooooooool.
With a little fresh fruit on the side (c’mon spring, please arrive soon with your bustling farmers markets and fresh fruits and veggies!)
And the final thing I’m loving lately? As always… this face!

I am crazy obsessed with blueberries and Greek yogurt right now. I eat it practically everyday and breakfast is by far my favorite meal if the day because of it!
I am on an oatmeal with a dollop of PB and drizzle of honey kick. I am also looking forward to fresh fruit, even cucumbers! It’s been so long since I could find decent cucumbers.
Hahahaha sorry I had to laugh at you eating an entire cantaloupe because I totally did that the other night…and then went and bought two more.

I’ve never thought about vinegar & ‘loupe…but I like it.

Gosh that biscuit, egg cheese and bacon sandwich looks delicious! I just ate some homemade pumpkin pancakes….but after seeing that picture, I’m starting to regret my decision!
Ha, it just about lunch time and this post got me super hungry. I might have to do breakfast for lunch today.
Mmmm, I love breakfast sandwiches. You have got to try the whole wheat biscuit recipe I use, when you have a little more time. It’s so super easy. I’ve tried over and over again to make my grandmother’s biscuits and they are so fickle and never turn out right. I can make the WW version and not sift the flour, mix the wet and dry ingredients in no particular order, and handle them as much as I want and they still turn out perfect.

I’m loving this fabulous warm up! I was able to go out for a walk TWICE today without freezin’ my bum off! Welcoming spring!
Today, I love that I had a workshop and didn’t have to go to ” school.” I also got an hour and fifteen minute lunch break to eat out at McAlister’s Deli; it’s been a nice break. That breakfast looks delish!!
Awww…..Koda! So cute! OOOH….canteloupe and red wine vinegar. I HAVE to try that!!!!!! And today? I’m loving beet, orange and fresh mint in a salad. It’s supposed to snow today, but it tasted like summer!!!
