What I’m Loving Wednesday

Continuing along with my spring fever feelings I’ve been having lately, I’m totally loving fresh fruit right now.  I may or may not have devoured almost an entire cantaloupe yesterday…

The cantaloupe I’ve been getting has been so sweet, and when dipped in red wine vinegar, it’s perfect! It may sound like an odd combo, but my mom used to serve us cantaloupe and cabbage (as sides to a meal) and the red wine vinegar would trickle over to my cantaloupe and I’ve loved the flavor explosion of the two together ever since!

What else am I loving? These new biscuits!

First things, first, I wouldn’t call these health food, but if you’re craving biscuits (like I was) and don’t have the time to whip up some homemade biscuits (which I didn’t), these new Pillsbury Simply Biscuits are a great option.  They are the only ready-to-go biscuits (that I could find) with NO transfat, NO high fructose corn syrup,and NO artificial colors or flavors.

Plus, when combined with my favorite eggs…

and a little shredded cheddar and nitrate/nitrite free bacon, it makes one killer breakfast!

    Mmmm, I love breakfast sandwiches. You have got to try the whole wheat biscuit recipe I use, when you have a little more time. It’s so super easy. I’ve tried over and over again to make my grandmother’s biscuits and they are so fickle and never turn out right. I can make the WW version and not sift the flour, mix the wet and dry ingredients in no particular order, and handle them as much as I want and they still turn out perfect.

    I’m loving this weather! :)

    Today, I love that I had a workshop and didn’t have to go to ” school.” I also got an hour and fifteen minute lunch break to eat out at McAlister’s Deli; it’s been a nice break. That breakfast looks delish!!

    Awww…..Koda! So cute! OOOH….canteloupe and red wine vinegar. I HAVE to try that!!!!!! And today? I’m loving beet, orange and fresh mint in a salad. It’s supposed to snow today, but it tasted like summer!!!

    Hi! This is my first time on your blog! I just had to say I am SO loving cantaloupe right now too! I was just tweeting about it yesterday! I have been finding some really sweet ones at HT lately! :) You have made me curious about splashing a lil red wine vinegar on it, so now I will definitely be picking up a bottle next time I’m at the grocery store!

    My first time on the blog too and I love it; the pictures are all so bright and gorgeous! I loveee pillsbury. I know its not healthy but boy is it delish!
