Technical Difficulties

Friday I had a big blog scare when I tried to update and all the webpage told me was ‘Fatal Error’.  Fatal error? Fatal error?! AAhhhHH!! What does that even mean??

After three conversations with my hosting site (2 of which they didn’t know how to help and told me there was a possibility I would have to start from scratch), I was assured they could, indeed, fix it. Phew.  So by Saturday, the blog was up and running.

Being that the blog was down Friday, and I didn’t know if it could be fixed, my dinner started out like this:

I was a little stressed (to say the least) and luckily Hubbs knows how to make a great dirty martini!  I sipped it and pouted while I made dinner.  I tried out a new recipe for dinner that quickly made my frown flip upside down!  I found this Roasted Vegetable and Goat Cheese pizza recipe through Jessica at How Sweet it Is, and was excited to try it from the moment I saw Goat Cheese!

I felt very proud as I may my dough from scratch and let it rise.

Then I roasted the veggies, and decided I have to do this MUCH more often as a side dish.  They were SO GOOD.

Then I put it all together to form a delicious, mouth watering pizza!  I added a few pepperonis so Hubbs would see meat on the pizza, but I only added about 6.  He caught on to my games and as soon as he saw the pizza he responded with “What happened? Was there a pepperoni shortage at the store?” Busted.

Once he took a bite though, no complaints!  The Italian seasoning mixed in to the dough gave it a lot of wonderful flavor, and the goat cheese? Well… you can’t go wrong with melty, creamy goat cheese!

The weekend was a great success, as we hosted about 40 people for the wedding shower.  I think it turned out wonderfully with lots of flowers, food, drinks, presents and laughs!

Sunday night’s dinner was the cherry on top of a wonderful weekend.  We had 2 friends over and all worked together to put together a wonderful summer meal… grilled salmon, salad and grilled corn.  What a way to end a great weekend!

That brings us to breakfast!  I have yet to make it to the grocery store, so I had to reach into the pantry to find some food.

A little instant oatmeal will do the trick!  The sugar/flavor part came out in one big chunk, so I actually threw most of it away to get rid of a lot of excess sugar.  I added a few almonds, too.

Ok, obviously I just want to show off some leftover flowers ;)  Here’s breakfast.

Yall, please forgive me.  This is going to be lengthy.  But with good reason.  My life changed today.  I’m sure you’ve heard me whine about how in Mooresville, NC, there is no Whole Foods.  No Trader Joes.  No Fresh Market.  It’s depressing.  I’ve been doing my food shopping at the local Bloom grocery store, where they have an organic section that is smaller than the backseat of my car.  Their organic green peppers cost $5.00 for 2 and they are rotted and fuzzy with mold before you get them home.  But today… today I discovered a treasure in Davidson… about 15 minutes from where I live…

I nearly teared up when I first walked in.  All the goodness I read about in other blogs (flax seed, wheat berries, cacao, etc) filled the shelves, along with all organic and locally grown produce.  Forget Disney Land, this is the happiest place on earth.  And no, I’m not exaggerating.

What’s that? Oh, just half of their Gluten Free section.  I’m not even a gluten free kind of gal, but I was impressed!

And they had oodles (yes, oodles) of Eden Organic canned products.  Did you know Eden Organic is the only brand of cans that don’t contain BPA?  It’s true…

I was so excited and started grabbing one of everything.  I’m sure my check out lady loved me :P

I got hungry while shopping, so I swung by their lunch area and grabbed couscous salad with cilantro, black beans, green peas, red peppers, green peppers, lemon juice, olive oil and couscous.  This was very flavorful! Loved it.  Sorry for the bad picture.

Then I decided to be adventurous and grabbed this:

Vegan chickenless salad!  Unfortunately this was pretty bland.  No flavor at all.  I had a bite or two plain, then ate most of the rest when I got home with some pita chips.

I got so many goodies that I can’t wait to try:

I couldn’t be more excited to have such an awesome store (kinda) nearby!!

I’m still giddy from my new grocery store.  What an amazing find!  I had a couple snacks through out the afternoon:

Yes, with skin on.  More nutrients! And it’s organic, so no pesticide residue :D

Then I decided to make a date with Jillian again.  I only had time for a quick workout, so the 30 day shred it was!  It definitely did not feel as challenging to me today, but I could still feel my arms fatiguing, which was good!  Of course, I’m still of level 1 ;)  A time or two more, and I’ll move on to work out 2.  I do feel like my arms a a bit more toned though, which I am very excited about!

Hubbs flew to Memphis for the day for work, so it was dinner for one tonight and I was excited to try some of my Healthy Home Market finds!  I started off with asparagus (please check out the price!)

roasted with some Garlic Gold (a new product for me that I found through KATH).

I love me some garlic!  I also added a squeeze of lemon, salt and pepper.


And I couldn’t wait to dig into this guy:

After baking for an hour at 375 degrees, I cut this delicious spaghetti squash in half and scooped out the seeds.  I couldn’t decide what I wanted to top it with, so instead of choosing, I did both! Version numero uno:

Spaghetti squash topped with Smart Balance butter, grated Parmesan cheese, pepper and fresh basil.  YUM and fresh!

Numero Dos:

Spaghetti squash topped with marinara sauce, 3 turkey meatballs (from my freezer), a sprinkle of parmesan and fresh basil.  So hearty!

Both ways were really good… I don’t think I could choose a favorite. All I know was that dinner was GOOD.

By the time I finished eating, Koda was peeking in to see if I was ready to watch The Bachelorette.  With Hubbs gone, it’s girls night in front of the TV.  Of to watch what crazy Casey does now… ;)

    The pizza looks great! Jess always has great recipes! I really enjoyed my dinner last night – blogged about it today. And I always love the crock pot!

    I’m glad your blog scare was resolved…I would FLIP!!! And I don’t drink much liquor, but a dirty martini really hits the spot sometimes! Mmmm!

    Fatal Error is so scary. Starting over from scratch would be heart breaking. I’m loving the hair do though! What part of GA does your dad live in? That’s where mine is too!

    love my keurig mini! the donut house coffee collection have my favorite flavors! and the pizza looks so delish and I’m so glad you found a better spot than Bloom to get all of your healthy/organic goodies!! it looks like they have even better stuff than TJ’s.

    That pizza looks great and congrats on the Healthy Market find!! I get way too over excited when it comes to grocery stores haha and that spaghetti squash looks awesome!? That’s still on my list of things to try. I’ll get to it one day (:
